ingredients
- 4 CUPS WATER
- 2 CUPS QUINOA
- 4 TABLESPOONS CURRENTS
- 1/2 TEASPOON SALT
- 1/4 CUP OLIVE OIL
- 4 CARROTS- MEDIUM SIZE DICE
- 3 ZUCCHINI-MEDIUM SIZE DICE
- 1 TABLESPOON SWEET PAPRIKA
- 1 TEASPOON CINNAMON
- 1/3 CUP CHOPPED FRESH CILANTRO

COMBINE WATER,QUINOA,CURRENTS AND SALT IN A LARGE SAUCEPAN AND BRING TO A BOIL.

REDUCE HEAT AND SIMMER UNTIL COOKED AND TENDER.

IN A LARGE SKILLET HEAT THE OLIVE OIL AND CARAMELIZE THE CARROTS, REMOVE FROM PAN AND SET ASIDE. SAUTE THE ZUCCHINI, ADD THE CARROTS BACK TO PAN, ADD THE PAPRIKA, CINNAMON, SALT AND PEPPER.TOSS AND ADJUST SEASONINGS.MIX IN THE CHOPPED FRESH CILANTRO.
