Specialty Green Beans
ingredients
- 1 package specialty green beans
- 2 tbsp olive oil
- 2 tbsp parsley -- chopped
- 1 1/2 tbsp white vinegar
- 1 clove garlic -- minced
- salt
- pepper
directions
Snip and simmer beans in 2 quarts of boiling, salted water for 5 minutes. Remove from heat and immediately place beans in a bowl of ice water (along with ice cubes). Remove beans after 2 minutes. Dry beans thoroughly. In a saucepan add olive oil, garlic, parsley and vinegar. When hot, add beans and stir for 2 minutes. Season with salt and pepper to taste. Serve.

NOTES : Specialty green beans are the small thin green beans. This recipe is still great with regular beans, just cook them until tender but not mushy, about 20 minutes.
