Tomato-Avocado Salad with Lime-Toasted Cumin-Cilantro Vinaig
ingredients
- 4 large tomatoes -- cut into 1" pieces
- 1 large red onion -- halved and thinly sl
- Lime-Toasted Cumin-Cilantro Vinaigrette -- recipe follows
- 2 large avocadoes -- peeled, pitted and c
- cilanto leaves -- for garnish
- Vinaigrette:
- 1/4 C fresh lime juice
- 2 tbsp rice wine vinegar
- 1 tbsp honey
- 1 tbsp cumin seeds -- lightly toasted and
- 1/4 xu cilantro -- chopped
- salt and pepper -- to taste
- 1/2 C canola/olive oil blend
directions
Combine tomatoes, onion, and dressing, to taste, and toss to combine. Add avocado and gently mix, being careful not to break up the avocado too much. Garnish with cilantro leaves.
Vinaigrette:
Combine lime juice, vinegar, honey, cumin, cilantro, salt and pepper in a bowl and whisk to combine. While whisking, slowly drizzle in the oil. Whisk until well-combined. Reseason with salt and pepper, if necessary.
