Nana's Tomatoes stuffed with Spinach
This is a great side dish. Easy and something you can do ahead of time.
ingredients
- 6 large Tomatoes
- 1 10oz box frozen spinach
- 1 cup Parmesan cheese
- 1 tsp garlic powder
- 1 cup bread crumbs
- 4 T melted butter

Core out tomatoes reserving the insides to add to the filling. Set aside.

Cook the frozen spinach according to package directions. Drain well. In a mixing bowl mix spinach, Parmesan cheese, garlic powder, bread crumbs and half the melted butter. Add the reserved tomato, mix well.

Place filling inside tomatoes and add the rest of the melted butter on top of each.

Bake in a hot 350 degree oven for about 30 minutes.

You can also use Cherry tomatoes and make these as appetizers. Serves about 24 at least.
