Lightened Tex Mex Tortilla Soup
ingredients
- 4-6“ corn tortillas sliced into 1/2” strips
- 2 tsp corn oil
- 1/4 tsp ground cumin (I used 1 tsp chili powder and 1 1/4 tsp cumin)
- 1 c chopped onion
- 3/4 c chopped green pepper
- 2 c chicken broth
- 1 c beef broth
- 8 oz rinsed black beans
- 1 c chopped tomatoes
- 2 T chopped green chili
- 1 c corn
- 1/2 medium avocado cubed
- 1 1/2 ounces shredded cheddar cheese (I used low fat)
- chopped cilantro

Bake tortilla strips 10-15 minutes

Heat oil in saucepan 30 seconds. Add cumin and cook 30 seconds.

Add veggies and cook 10 minutes.

Add broths, beans, tomatoes, chilies and simmer or about 10 minutes. I cooked a lot longer.

To serve, garnish with avocado, tortilla strips, cheese, and cilantro.

Squeeze lime wedge.
