Oatmeal Apricot Cookies

ingredients

  • 1 1/4 c rolled oats
  • 3/4 c all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 c (1 stick) butter, room temperature
  • 1/2 c packed light brown sugar
  • 1/4 c granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 c chopped dried apricots
  • 3/4 c slivered almonds

    Preheat oven to 350F. Combine oats, flour, baking powder, salt and set aside.

    Cream butter and sugars with a mixer until smooth; beat in egg and vanilla. With mixer on low speed, add oat mixture until just combined. Stir in apricots and almonds by hand.

    Roll balls of dough and place on baking sheets. Flatten balls to about 1/2 in thickness.

    Bake cookies until edges begin to brown, 18-20 mins. Let cool 5 mins on baking sheet, then transfer to a wire rack.
