Patty's Carrot Cake
Carrot Cake with Cream Cheese Icing
ingredients
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 4 beaten eggs
- 2 cups of all-purpose flour
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 3 cups of shredded carrots
- 1 cup of walnuts
- Icing-
- 1 8oz. package of cream cheese
- 1 box of confectioners sugar
- 1 stick of softened butter
- 2 teaspoons of vanilla

Beat oil and sugar. Add eggs and beat until well blended. In a separate bowl combine dry ingredients. Slowly add dry ingredients to the wet mixture. Fold in the carrots and walnuts.

Bake in 9 X 13 greased cake pan for approximately 1 hour. Test cake by sticking toothpick or a knife in the center of the the cake. When the toothpick or knife comes out clean- cake is done.

Cool cake completely before icing.
notes
I grate the carrots in a food processor until they are very,very fine.
