Salad- Santa Rosa Rice Salad
ingredients
Salad- 1 box long grain and wild rice mix
- 3 chicken breast
- 4 green onions, chopped
- 1 red pepper, diced
- 3 oz Chinese pea pods (good handful), chopped coarsely
- 2 avocados, diced
- 1 chip chopped almonds, toasted
- 2 chopped garlic cloves
- 1 T Dijon mustard
- 1/2 t salt
- 1/4 t pepper
- 1/3 cup seasoned rice vinegar
- 1/3 cup canola or olive oil

Cook chicken and rice

Add all ingredients in a large bowl
Dressing

Must chill about 1 hour in blender, combine all ingredients.

Process till smooth and chill

pour over salad and toss well

Serve immediately.
notes
Dressing must chill for 1 hour. If you don't serve immediately., wait to add avocado and almonds. Good main course served with fresh corn and fresh bruschetta
