Chicken And Rice (Arroz Con Pollo)
ingredients
- one chicken cut into pieces and skin removed.
- 3 oz. of olive oil.
- 1 large onion finely chopped
- 1 - 3 oz. garlic powder or Adobo Seasoning (season to taste)
- salt to taste
- 1 cup of tomato sauce
- 1 small green bell pepper, seeded and finely chopped.
- 4 cups of cold water.
- 1 1/2 cups short-grain rice (Valencia rice)
- 1/2 teaspoon powder saffron

1. Combine the rice, 4 cups of water and saffron, set aside.

2. In a large, casserole over low heat, mix all other ingredients with olive oil. Add the chicken and cook, stirring, until the chicken is opaque, 15 to 20 minutes.

3. Add more water if needed, then add the rice mixture, cook on low until rice is tender; 20 to 30 minutes .

4. Mix well, and transfer to serving patter. Garnish with 1 cup of drained canned baby peas and 2 pimientos, chopped.
