Italian Filled Cookies
Mom’s traditional Christmas cookies may take alot of time but it’s worth it!
ingredients
- Dough: (3x’s for filling)
- 3/4 cup oil
- 1/4 cup milk
- 2 eggs (beaten)
- 4 1/4 cups flour
- 1 cup sugar
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- Sift dry ingredients together. In bread machine layer “wet ingredients” on the bottom and top with dry. Dough cycle for 1 hour.
- Filling:
- 1# walnuts, chopped
- 1# figs
- 1 pint grape jelly
- 3/4# sugar
- 1 1/2 pints water
- 1# raisins
- 1 Tablespoon cinnamon

Grind nuts, figs and raisins in food processor. Once grinded put in large pan, add all filling ingredients and simmer stirring constantly. Let cool.

Put dough through roller, making strips. Drop walnut size spoonfuls of filling onto strips (about 4 per) and roll crimping ends. Bake at 400 degrees for 12 minutes. Once cooled lightly frost with white frosting and top with colored sprinkles

Make sure you remove knot from figs before grinding!
