Apple Nut Muffins with Streusel Topping

ingredients

  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 eggs
  • 1/2 cup buttermilk or sour cream
  • 4 Tbl. butter, melted
  • 1 cup brown sugar
  • 1 cup chopped apples
  • 1/2 cup chopped walnuts
  • Topping:
  • 1/4 cup plus 1 Tbl. chopped walnuts
  • 1/4 cup plus 1 Tbl. brown sugar
  • 2 Tbl. flour
  • 1/2 tsp. cinnamon
  • 2 Tbl. butter, melted

    Preheat oven to 375°.

    Grease a 12 cup muffin tin.

    In a large bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl whisk eggs, buttermilk, and butter. Add sugar and whisk. Add dry ingredients and mix. Fold in apples and walnuts. Fill each cup about 2/3 full.

    To make topping, combine ingredients in a small bowl and stir until crumbly. Sprinkle topping on muffins. Bake 25 minutes.
