Chocolate Chip Cookie Ice Cream Sandwiches

ingredients
- 1 1/2 cup flour
- 3/4 tsp baking soda
- 3/4 tsp salt
- 3/4 cup room temperature butter
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 whole egg
- 1 egg yolk
- 3/4 tsp vanilla extract
- 1 1/4 cups chocolate chips

Heat oven to 350° F.

Combine flour, baking soda, salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.

Add egg and egg yolk, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips.

Line 2 baking sheets with parchment paper and make cookies about 3 Tbsp size.

Freeze dough for at least one hour until firm.

Bake 8-10 minutes until edges are golden brown. Let rest on baking sheet for 2 minutes then transfer to cooling rack.

Once completely cooled, scoop 1/2 cup softened ice cream onto cookie and top with another cookie. Wrap individually in saran wrap and freeze until ready to serve.
