Spinach & Feta Quesadillas

ingredients

  • 1 cup fresh spinach
  • 1/4 cup feta cheese, crumbled
  • 1/2 cup chopped tomatoes
  • 2 flour tortilla shells
  • cooking spray or olive oil
  • 1/2 tsp. lemon juice
  • 2 dashes of garlic powder

directions

Sauté spinach with garlic in light oil in small pan until tender. Remove from pan to small bowl and add tomatoes; toss with 1/2 tsp. lemon juice and garlic powder. If needed add a little more oil to pan. Lay in one flour tortilla; top with spinach mixture and feta; top with remaining tortilla shell. Cook both sides until lightly brown. Cut with pizza cutter into bite size pieces. Enjoy this healthy dish!
