Breasts of Chicken Supreme
Love this dish...it’s rich, but great for serving an impressive meal for a group!
ingredients
- 6 whole chicken breasts, halved and skinned
- 1/4 Cup flour
- 2 1/2 teasp. garlic salt
- 1 teasp. paprika
- 1/4 Cup butter
- 1/4 Cup water
- 2 teasp cornstarch
- 1 1/2 cups half & half
- 1/2 cup sherry
- 1 teasp. lemon peel
- 1 Tbs. lemon juice
- 1/2 lb. mushrooms, sliced
- 1 Cup grated Swiss cheese
- 1/2 Cup parsley
directions
Coat chicken with flour, garlic salt and paprika. Lightly brown the chicken in hot butter. Add 1/4 cup water and simmer, covered for 30 minutes or until chicken is almost tender, set chicken aside. Mix cornstarch and 1/4 cup half & half, stir into the drippings and cook, stirring over low heat. Gradually stir in the remaining half & half, sherry, lemon peel, and lemon juice. Continue stiring until sauce is smooth and thickened. Place chicken breatsts in large oblong baking dish and pour sauce over chicken. Bake covered in 350 degree oven for about 30 minutes or until sauce us bubbly. Unvcover, sprinkle mushroom slices and grated cheese over top and bake until cheese melts (approximately 10 minutes). Garnish with parsley and serve with a favorite rice dish.
