Grilled Rosemary Dijon Chicken
This marinade was amazing and easy! You could really taste the rosemary and just a hint of dijon. The combination of everything made a sweet, light glaze when it was cooked.
ingredients
- 2 cloves minced garlic
- 1 tablespoon fresh rosemary, minced
- 1/2 teaspoon salt
- the juice of one lemon
- 2 tablespoons of Dijon mustard (or whatever mustard you have available)
- 1 tablespoon teriyaki (or soy) sauce
- 2 tablespoons olive oil
- 4-7 chicken breasts

Whisk together the garlic, rosemary, salt, lemon juice, mustard, and teriyaki sauce.

2. Whisk in the olive oil until the mixture has emulsified and appears thick and creamy.

3. In tupperware or a vacuum sealer, combine the chicken and the marinade. Make sure the chicken is covered as best it can be. Refrigerate and marinate the chicken for at least 3 hours, but 24 hours is ideal.

4. Grill the chicken over a medium flame until the chicken is white and its juices run clear (160 degrees F with a meat thermometer).
