Creamy Wild Rice & Mushrooms
ingredients
- 1/2 cup wild rice, rinsed and uncooked
- 2 T vegan butter
- 2 scallions, finely chopped (white part only)
- 1 lb mushrooms, finely chopped
- 6 cups veggie broth
- 1 cup soy cream
- Salt and pepper
- Pinch of nutmeg
directions
Combine butter and scallions, cooking over medium heat until scallions are tender. Add mushrooms to scallions over a medium heat for 5 minutes, stirring frequently. Add broth and wild rice; simmer until rice is tender (about 40 minutes). Add cream and simmer 10 more minutes. Sprinkle with nutmeg, serve hot.
