Gruyere Spinach
Mom made this for Christmas dinner one year and it was incredible! Very fattening, but well worth the calories!
ingredients
- 1 Tbs olive oil
- 1 sm yellow onion diced
- 1 clove garlic minced
- 2 boxes frozen chopped spinach, thawed
- 4 oz cream cheese
- nutmeg, 1 teaspoon
- salt and pepper
- Gruyere cheese, grated
- Bread crumbs(optional)

1. In a skillet over med heat cook onion and garlic until translucent, add nutmeg and a little salt and pepper.

2. Squeeze out spinach to remove extra water and add to onion mixture. 3. Cook for a while till spinach dries out a bit.

4. Add cream cheese and take off heat and mix to combine.

5. Put mixture in a greased, gratin dish.

6. In bowl mix gruyere cheese with bread crumbs; once combined sprinkle on top of spinach mixture.

7. Cook in a 350 for about 20 min until cheese is melted and bubbly.
