Pear, Chicken and Feta Salad
Found this one at Henry’s ENJOY
ingredients
- 6 cups mixed salad greens (always include spinach)
- 1 medium ripe pear, sliced thin
- 1 1/2 cups cooked chopped or shredded chicken breast meat
- 1/4 cup crumbled feta cheese (low fat)
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans, toasted (or walnuts)
- 1/4 cup olive oil
- 2 T White wine vinegar
- 2 T fresh orange juice
- 1/2 t grated orange peel
directions
In a large salad bowl combine greens, pear, chicken, feta, cranberries, and nuts. In a small bowl, whisk olive oil, vinegar, orange juice and peel, and salt and pepper to taste; drizzle about 4 T over salad and toss gently.
