An Extra Crispy Company Waffle
ingredients
Whip- 4 egg whites, until glossy
- 2 Tbsp. sugar
- 2 tsp. vanilla
- 3 cups buttermilk
- 1 cup milk
- 1 cup vegetable oil (canola)
- 4 egg yolks
- 3 cups flour (half whole wheat)
- 1 cup cornstarch
- 1 tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- dash of nutmeg &/or cinnamon (optional)

Pour wet (bowl 1) into dry ingredients (bowl 2) and whisk until just mixed.

Add egg white to batter in dollops. Fold in with a spatula just until incorporated.

Cook batter in hot waffle iron until brown and crisp. Remove from waffle iron and set directly on rack in preheated 200° oven for 5–20 minutes. Do not stack.

All waffles can be made in advance and served all at once if desired.

Gingerbread Variation: eliminate vanilla; add 2 T. dark molasses to bowl 1; add 2 t. cinnamon and 1 t. ginger to bowl 2; serve with applesauce and whipped cream
