Cheese Tartlets

ingredients

  • 8 oz. goat cheese
  • 2 eggs
  • 1 Tbl. butter
  • 1 Tbl. bread crumbs
  • 1/2 cup buttermilk
  • 1 clove garlic, pressed
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. mixed Italian herbs
  • 1 Tbl. sundried tomatoes, minced
  • 1/8 tsp. cayenne pepper
  • 40 1 1/2 inch diameter mini phyllo pastry shells, cooked

    Preheat oven to 375°.

    In a food processor mix cheese, eggs, butter, breadcrumbs, buttermilk, garlic, salt, pepper, herbs, tomatoes, and cayenne. Place tart shells on a baking sheet and fill each 3/4 full. Bake 10-15 minutes. Cool slightly before serving.
