Maple Oatmeal Raisin Cookies

ingredients

  • 1/2 cup roasted almonds
  • 1/2 cup corn oil
  • 1/3 cup pure maple syrup
  • 1/3 cup rice syrup
  • 3 tablespoons water
  • 1 tablespoon almond butter
  • 1 1/4 teaspoons pure vanilla extract
  • 3/4 cup whole wheat pastry flour
  • 3/4 cup unbleached white flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup raisins

    Preheat oven to 375.

    Coarsely chop the cooled almonds and set aside.

    In a large bowl, combine the oil, both syrups, the water, almond butter, and vanilla with an electric mixer at medium speed until well blended.

    In a small bowl, combine both flours, the cinnamon, and salt.

  • 5

    Add the flour mixture to the oil mixture and mix until just combined.

  • 6

    Add the oats, raisins, and reserved almonds and mix together until well combined.

  • 7

    Drop the dough in 1 in. balls on a well-oiled baking sheet and flatten the dough with a wet palm.

    Bake for 25-30 min.

  • 9

    Let cool on wire racks or serve warm.
