Chocolate Ginger Cookies

  • 3/4 cup unsalted butter
  • 2 cups flour
  • 1/2 cup unsweetened cocoa
  • 2 1/2 Tbl. ground ginger
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 1 tsp. vanilla
  • 8 oz. bittersweet chocolate, finely chopped
  • 1/3 cup sugar

    Preheat oven to 350°.

    Whisk flour, cocoa, ginger, baking soda, cinnamon, nutmeg, and salt. In another bowl beat butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla. Beat to combine.

    Mix in dry ingredients. Stir in chocolate. Form into balls, roll each in sugar, and flatten to 1/4 inch thickness on a baking sheet.

    Bake 5 minutes, rotate pan, and bake 5 more minutes.
