Apple-Carrot Bread
A moist vegetable-rich bread, perfect for a cold winter morning.
ingredients
- 1 1/2 C. All purpose flour
- 1 1/2 C. Whole Oat flour.
- 2 tsp. Baking Soda
- 2 tsp. Baking powder.
- 1 tsp. cinnamon
- 1/2 tsp. corriander
- 1/2 tsp. nutmeg
- 1/8 tsp allspice
- 4 egg whites
- 1 mediuim butternut squash,cooked & pureed.
- 1 C. Sugar
- 1/4 C. Honey
- 1/2 C. Canola or safflower oil
- 2 tsp. orange zest.
- 1/2 C. shredded carrots
- 1/2 C. shredded apple
- 1/2 Cup Raisins

Preheat Oven to 350° and spray a loaf pan with baking pan spray.

Mix Dry ingredients & Spices. Set Aside.

Whip Egg Whites until just past foamy.

In a separate bowl beat together the Squash, Oil, Sugar,Honey and Orange Zest. Fold in the egg whites. Fold in the Carrot, Apple and Raisins.

Bake @ 350 1-1 1/2 hours or until a skewer comes out clean.
notes
Oat flour can be made by processing whole rolled oats in a food proccessor until fine.
