Scallops with Basil and Tomato
Scallops with fresh spiced tomatoes, basil, and garlic.
ingredients
- 1 lb Sea Scallops
- 1 cup chopped seeded tomato
- 2 TBSP fresh chopped parsley
- 1/2 tsp. dried basil leaves
- 1 garlic clove, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 TBSP olive oil
- 1 TSBSP butter
- lemon wedges, optional
directions
Combine tomato, herbs, and garlic, in small bowl and set aside. Heat the olive oil and butter in large nonstick skillet over medium high heat. Add the scallops and cook for two minutes on each side. Add tomato mixture to the pan and cook one minute, stirring gently until heated. Serve immediately with lemon wedge if desired.
