ingredients

Salad
  • 1 medium head of lettuce (romaine or iceburg)
  • 1/2 medium head of red cabbage
  • 4 carrots peeled
  • 4 celery stalks
  • 1/2 cup red onion
  • 1 seedless cucumber (remove seeds)
  • 4 plump tomatoes, cored and seeded
  • 3/4 lb provolone cheese
  • 3/4 lb salami
  • 1 cup grated parmesan
  • 1 can garbanzo beans, rinsed and dried
  • Red pepper
  • Broccoli
Dressing
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper

directions

Remove moisture from all before chopping. Remove seeds from tomatoes and cucumbers. Chop ingredients to same size and store separately until ready to serve. Mix the dressing. Go light on dressing. Drizzle dressing on one spoon at a time, so you don’t over do. Add all ingredients and serve.
