THAI CHICKEN STIR FRY
ingredients
- 1 tbsp olive oil
- 2 tbsp fresh ginger, chopped
- 3 tbsp fresh garlic, chopped
- 1 large onion, coarsely chopped
- 1 large green pepper, cut in 1" squares
- 3 green onions, cut in 1" pieces
- 2 jalapeno peppers, chopped
- 1/2 C chicken broth
- 8 oz fresh mushrooms, sliced
- 1 1/2 lbs chicken breast, cut in 1" pieces
- 1 tbsp soy sauce
- 1/4 C oyster sauce
- 1/3 C cooking sherry
- 1 tsp sugar
- 1 tbsp black pepper
- 1/2 C fresh basil, chopped
directions
Heat oil in large skillet. Add ginger and garlic and saute for about a minute. Add onion, green pepper, green onion, jalapeno peppers and stir fry for about 5 minutes. Add the chicken broth and then the mushrooms. Cook until mushrooms begin to soften, about 5 minutes. Add chicken pieces and cook until chicken is done. Mix liquid ingredients and sugar and add to skillet. Continue to cook for about 5 minutes. Add black pepper. Thicken stir fry with a mixture of corn starch and water to desired consistency. Add chopped basil.
