Clay Cooker Arroz con Pollo

This is a one-dish meal that I heard about from a server in a local VA Beach recipe. I’ve been fixing this for my family for about 10 years now and it is a family favorite.

ingredients

  • Large yellow onion-sliced
  • Pinch of saffron
  • 1 to 1 1/2 cups favorite salsa
  • 1/2 cup white wine
  • 1 1/2 cups water
  • 1 package chicken breasts
  • 1 package chicken thighs
  • 1 package chicken drumsticks
  • White pepper
  • 1/2 tsp salt
  • 1 1/2 cups rice (your favorite--I like organic brown or Basmatti)

directions

Soak clay cooker in cold water 10 to 15 minutes. Once soaked place rice in bottom. Add onion and pinch of saffron. Rub chicken pieces in white pepper. Place on top of rice. Fit in the chicken pieces “snuggly”. Add white wine and water. Top with salsa. Cover and cook in oven at 500 degrees for 90 minutes.
