Argentine Butternut Squash Soup
This was served at our Argentina style dinner.
ingredients
- 4 T. Butter
- 1 medium White Onion, chopped
- 1 Green Pepper, chopped
- 2 Garlic cloves, minced
- 1 Anaheim Pepper, seeded and chopped
- 4 lbs Butternut Squash, peeled and cut into 1/2" cubes
- 3 C. Beef Stock
- 3 C. Milk
- Salt and Pepper to taste
- Croutons to garnish

*original recipe calls for adding two egg yolks and 1 T. of Parmesan Cheese after you puree the soup. We forgot and need to try.
