Hash Brown Casserole
You can substitute the sausage for bacon or chicken sausage or ham. Sometimes instead of hash browns, I use sweet potato or yams. Can be made ahead and refrigerated. Bake just before serving.
ingredients
- 3 T. butter
- 1 small onion, chopped
- 4 cups hash browns
- 1 lb sausage
- 2 1/4 cups whole milk
- 8 eggs
- 1 tsp. salt
- 1/4 tsp pepper
- 1/4 tsp nutmeg
- 2 T dijon mustard
- 8 cups cubed bread (french or italian), w/o crust
- 2 cups shredded cheddar cheese
- 2 cups parmesan cheese

Cook the sausage until done.

Saute the hash browns with the onion in butter until brown.

Combine the milk, eggs and seasonings. Set aside.

Layer the sausage, potatoes and bread in a large casserole. Pour egg mixture over the layers. Cover with the two cheeses.

Bake for 45-50 minutes in a 350F oven until puffed and golden brown.
