Black Bean, Corn and Red Pepper Salsa
ingredients
- 1 tablespoon and 1 teaspoon Seasoned Rice Vinegar - Original or Roasted Garlic
- 1 teaspoon olive oil
- 1/3 jalapeno, seeded and minced
- 1/3 clove garlic, minced
- 1/8 teaspoon chili powder
- 1/8 teaspoon cumin
- 1/8 teaspoon hot pepper sauce
- 1/3 (16 ounce) can black beans, rinsed and drained
- 1/3 cup frozen corn, thawed
- 1/3 cup diced red bell pepper
- 1 tablespoon and 1 teaspoon finely chopped red onion
- 2 teaspoons chopped cilantro
directions
In large serving bowl, combine rice vinegar, oil, jalapeno, garlic, chili powder, cumin and hot pepper sauce; mix well. Add remaining ingredients; toss gently. Serve as an accompaniment to grilled seafood, meats, chicken or hamburgers.
