Caribbean Cobbler
ingredients
- 2 guava, peeled, seeded, and chopped
- 2 apples, peeled, seeded, and chopped
- 1/3 cup sugar
- 2 Tbl. lemon juice
- 1 Tbl. guava paste
- 1 Tbl. cornstarch, dissolved in 2 Tbl. cold water
- 1 cup strawberries
- 1 cup flour
- 1/3 cup sugar
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 3 Tbl. butter
- 1 egg
- 3 Tbl. milk

Preheat oven to 400°.

Coat a 9 inch square baking dish with cooking spray.

In a saucepan, bring guava, apples, sugar, lemon juice, and guava paste to a boil over medium heat. Reduce heat, cover, and simmer 5 minutes. Add cornstarch mixture, stirring until thick and bubbly. Fold in strawberries. Pour into prepared dish.

Mix flour, sugar, baking powder, and cinnamon in a bowl. Cut in butter with a large fork until crumbly. Mix in egg and milk. Pour over fruit. Bake 25 minutes.
