Cheesy Cornbread for a crowd
ingredients
- 1 1/2 cup yellow cornmeal
- 2 cups all purpose flour
- 4 TBLS. Sugar
- 1/2 cup canola oil
- 2 tsp. salt
- 7 tsp. baking powder
- 4 eggs
- 2 cups buttermilk
- 1 8oz. bag shredded Sargento artisan Mexican cheese

Combine dry ing. In large bowl and whisk until combined. Mix wet ingredients and let sit until room temp.

Heat oven to 425.

Mix wet ingredients into dry and mix well. Add cheese from bag, reserving 1/2 cup to sprinkle on top.

Pour in 9 x 13 pan that has been rubbed with 2 tbls canola oil.

Cook 25-30 min. until golden brown and knife inserted into middle comes out clean.
