Orange Praline Yams
ingredients
- 2 2lb cans yams drained
- 2/ c orange juice
- 1 T grated orange peel
- 5 T brandy
- 2 t salt
- 1 t ground ginger
- 4 T butter, melted
- 1/3 c light brown sugar
- 3 egg yolks
- PRALINE TOPPING
- 2/3 c brown sugar
- 1/4 lb butter, melted
- 1 c chopped pecans
- 1 t ground cinnamon

Beat yams until smooth. Mix in remaining ingred beating til light and fluffy. Butter a shallow casserole. Pour in yam mixture and smooth the top.

Make praline topping by mixing all ingredients. Spread evenly over yams.

May cover and refrig over night.

Bake 350 45-50 min
