Matzoh Fruit Kugel
ingredients
- 5 matzohs
- 6 lrg eggs
- 2 unpeeled red apples (shredded)
- 1 sm unpeeled pear (shredded)
- 8 oz crushed pineapple
- 3/4 c raisins
- 3T sugar
- 1 lemon rind grated
- 1T lemon juice
- 1 t cinnamon
- 2t vanilla
- 3 T butter
- cinnamon sugar for top
- currant jelly

Break matzohs into bowl and cover with water. Soak 2 min and drain. In lrg bowl mix eggs until fluffy. Stir in apples, pear, pineapple, raisins, sugar, lemon juice, rind, cinnamon and vanilla.

Stir in matzohs.

Butter a 9x13 dish and pour excess into mixture. Pour mixture into dish. Sprinkle cinnamon sugar mixture over the top. Dot with jelly.

May refrigerate over night.

Bring to room temp and bake 325 45min or til top is golden
