Beckham's Cream Corn
Great for the holidays.
ingredients
- 2- 20 oz. packages of frozen white corn
- 1 pint half and half
- 1 tsp. salt
- 2 T. sugar
- Pinch white pepper
- 2 T. melted butter
- 2 T. flour
- Parmesan cheese
directions
Defrost corn. Combine the corn, half and half, salt, sugar, and pepper in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Blend the melted butter and flour together (roux)and add to the corn. Mix until thickened and remove from heat. Pour into casserole dish and sprinkle with Parmesan cheese. Put under broiler until brown.
notes
To cut calories you can substitute milk for the half and half and increase the flour a little.
