Easy Baja Taco Salad
Great salad for a summer meal.
ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 1/2 lb ground turkey or ground beef
- 3 tbsp chili powder
- 1 tbsp dried oregano
- 1 teaspoon ground cumin
- Salt
- 1 12oz. can pitted olives sliced
- 1 28oz. can kidney beans, drained
- 1 16oz. can garbanzo beans, drained
- 1 16oz. cans pinto beans with jalapenos
- 2 tomatoes, roughly chopped
- 2 heads lettuce, shredded
- 2 cups shredded longhorn cheese
- 8 oz. baked tortilla chips
- 2 cups low fat ranch dressing
- 1/2 cup roasted salsa mild

In a large nonstick pan heat oil and cook the onions until soft, add meat and cook 7 -10 minutes until pink is gone. Use a wooden spoon to break up, while it cooks. Carefully drain off the liquid and stir in seasonings.

In a huge serving bowl, combine lettuce, cheese, beans, olives, tomatoes, chips and meat mixture, toss well.

In a small bowl, combine the dressing and salsa. Either added the dressing or serve on the side.
