Sunbutter Blossoms
These are the classic cookie with the chocolate kisses on top (created by Freda Smith, finalist in the 1957 Pillsbury Bake-Off Contest!). With just a couple of tweaks we were able to modify these to use Sunbutter (a sunflower seed butter) so they are peanut allergy-friendly.
ingredients
- 1 3/4 c all-purpose flour
- 1/2 c sugar
- 1/2 c firmly packed brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 c shortening (or half each butter and shortening)
- 1/2 c plus 1 tbsp Sunbutter
- 3 tbsp milk
- 1 tsp vanilla
- 1 egg
- extra sugar for rolling
- 48 chocolate kisses

Heat over to 375°F.

In a large bowl, combine all ingredients except sugar for rolling and chocolate kisses; mix at low speed until stiff dough forms.

Shape dough into 1 in balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets (cookie sheets may be line with parchment paper if desired).

Bake for 10 - 12 min or until golden brown. Remove from oven and immediately top each cookie with 1 candy, pressing down firmly so cookie cracks around edge; remove from cookie sheets.
