Pt. Reyes Blue Cheese Mashed Potatoes
ingredients
- 4 Large russet potatoes, peeled and quartered
- 6 T. Unsalted butter
- 2 oz. heavy cream
- 1/2 c. Pt. Reyes blue cheese, crumbled
- Kosher salt
- Freshly ground black pepper
directions

1. Boil potatoes in salted water until fork tender. Drain. Meanwhile, beat butter and cream in a small pot.

2. Mix hot boiled potatoes and cream mixture in the Kitchen Aid with the paddle attachment. Blend in blue cheese, salt and pepper.
