Pt. Reyes Blue Cheese Mashed Potatoes

ingredients

  • 4 Large russet potatoes, peeled and quartered
  • 6 T. Unsalted butter
  • 2 oz. heavy cream
  • 1/2 c. Pt. Reyes blue cheese, crumbled
  • Kosher salt
  • Freshly ground black pepper

    1. Boil potatoes in salted water until fork tender. Drain. Meanwhile, beat butter and cream in a small pot.

    2. Mix hot boiled potatoes and cream mixture in the Kitchen Aid with the paddle attachment. Blend in blue cheese, salt and pepper.
