ingredients

  • 1 Tsp. Olive Oil
  • 1 Medium Sized Eggplant, cut crosswise into 1/2 inch thick slices
  • 2 Large Tomatoes, cut into 1/2 inch thick slices
  • 1 Large Sweet Yellow Onion, peeled & cut into 1/4 inch thick slices
  • 1 Tsp. Minced, Peeled Garlic
  • 1 Tsp. Salt
  • 1/4 Tsp. Pepper
  • 1/4 Cup Olive Oil
  • 2 Tsp. Dried Basil Leaves
  • 8 Ounces Mozzarella Cheese, diced fine
  • 1/4 Cup Bread Crumbs

directions

Heat oven to 400 degrees. Use tsp. of oil to grease rectangular baking dish (about 13x9 in). Place alternating slices of eggplant, tomatoes, and onion in baking dish, in rectangular pattern. In a small bowl mash garlic with salt and pepper until smooth, then stir in olive oil and basil. Spoon mixture over vegetables, cover with foil, and bake in center of oven for 30 minutes. Top with cheese and bread crumbs, and then broil for 3 to 5 more minutes.
