Shanghai Chicken & Zucchini
ingredients
- 2 skinless, boneless chicken breast halves
- 1 medium zucchini, halved lengthwise and sliced crosswise into 1/4-inch thick halves
- 1 can (11 ounces) mandarin oranes in light syrup, drained
- 1 tablespoon ponzu (citrus soy) sauce OR tamari sauce
- 1 teaspoon hot chili oil
- 1 teaspoon cornstarch
- 1 teaspoon fresh ginger OR 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper

Place all ingredients in a medium or large Ziploc Zip’n Steam Bag

Seal bag and shake gently to combine ingredients. Pat ingredint into single layer.

Microwave on full power for approximately 5 to 6 minutes, or until chicken is cooked through. Allow bag to stand for 1 minute before handling. Carefully open bag.

To serve chicken, cut into thirds, with zucchini, oranges and sauce spooned over top. Garnish with 2 tablespoons chopped fresh cilantor and lime wedges, if desired.
