GREEN STUFF (7-UP SALAD)

- 16 ounce package cream cheese, cut into chunks
- Small can crushed pineapple, drained well
- 1 teaspoon vanilla
- 1/4 cup sugar
- 1/2 cup chopped pecans
- 3 ounce package lime Jello
- 1 cup boiling water
- 12 ounce can 7-Up, Sprite, etc.

Dissolve Jello in boiling water. Cool. Mix with cream cheese in a blender or food processor.

Put sugar, pineapple, vanilla and nuts together in a bowl and mix well by hand. Add Jello/cream cheese mixture and transfer mixture to a mold or baking dish. Add 7-Up and refrigerate until set.

(Stir after 35-40 minutes to prevent layering of pineapple and nuts.)
notes
We usually double recipe to fill a 9 x 13 inch baking dish so there's plenty for 'seconds'.
