Hot Chicken Salad Casserole
We ate this yummy casserole at Julie Peterson’s 40th birthday lunch!
ingredients
- 2 cups diced cooked chicken
- 2 cups diced celery
- 1/2 cup blanched slivered almonds
- 1/2 tsp. salt
- 1/2 tsp. grated onion
- 2 tbls. lemon juice (freshly squeezed)
- 1 cup mayonnaise
- 1/2 cup shredded medium-sharp cheddar cheese
- 2/3 cup crushed potato chips
directions
Mix first seven ingredients. Pour into shallow buttered 8X8 baking dish. Top with cheese and potato chips. Bake uncovered at 375° for 20 minutes.
