Elegant Beef Tenderloin with Herb-Dijon Crust
ingredients
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh thyme
- 1/4 cup chopped fresh oregano
- 3 cloves garlic, chopped
- 2 Lb. beef tenderloin
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbs. Dijon mustard

Heat oven to 400. In small bowl mix parsley, basil, thyme, oregano, and garlic, set aside.

Spray bottom of roasting pan with cooking spray. Place beef in pan, sprinkle with salt and pepper. Spread mustard over beef, pat parsley mixture over mustard.

Bake uncovered 35 to 45 minutes or 140 degrees.

Place beef on cutting board and cover with foil for 15 minutes. Cut beef into 1/2 inch thick slices.
