Pumpkin Chocolate Chip Cupcakes
ingredients
- Cupcakes:
- 1 cup flour
- 3/4 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup of canned pumpkin
- 1/2 cup vegetable oil
- 1/2 honey
- 1/2 cup water
- 1/2 cup chopped walnuts
- 1 cup miniature chocolate chips
- Icing:
- 1 8oz package of cream cheese
- 1/4 cup butter
- 1 tsp vanilla
- 2 cups powdered sugar

Cupcakes:

In a large bowl, combine the first 7 ingredients. Combine eggs, pumpkin, oil, honey and water. Mix well and stir in dry ingredients. Fold in chocolate chips and walnuts. Pour batter in into greased or paper muffin cups. Bake for 20-25 minutes at 350 degrees. Cool for 10 minutes before removing from pans.

In a small mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually beat in powdered sugar until smooth. Frost cooled cupcakes.
