Ham and Cheddar Strata
Great recipe to make ahead and pop in the oven so your kitchen is clean when guests arrive!
ingredients
- 18 slices(about 3/4 in. thick) from a loaf of slightly dried out Italian bread
- 6 oz. sliced ham,stacked and cut in strips
- 1 box(10 oz.) frozen chopped spinach,thawed and squeezed dry
- 1 jar (12 oz.) roasted red peppers, well drained cut into strips(optional)
- 1-2 cups extra sharp Cheddar cheese,shredded
- 4 scallions,sliced
- 2 1/2 cups whole milk
- 5 large eggs
- 2 Tbsp. Dijon mustard

1.Lightly coat a 2 qt. shallow baking dish with non-stick spray.

2.Put 6 slices bread in bottom of dish. Cover with half the ham,spinach,red peppers, cheese and scallions.

3.Cover with 12 slices bread, overlapping. Top with remaining ham, spinach, red peppers, cheese and scallions.

4.Whisk milk,eggs and mustard in a bowl:pour evenly over strata. Cover with foil: refrigerate at least 2 hrs, or overnight.

5.Heat oven to 350 degrees. Bake,covered,40 minutes. Remove foil and bake 10-15 minutes longer until puffed and center is at least 160 degrees.
