Spinach & Artichoke Dip with Smoked Sausage

ingredients

  • 1 links smoked sausage, diced
  • 2 small onions, chopped fine
  • 1 med. Red bell pepper, chopped fine
  • 2 large cloves garlic, minced
  • 1 – 2 jalapenos, chopped
  • 1 large can quartered artichokes, drained
  • 1 – 2 lb. bag frozen chopped spinach, thawed and drained
  • 1 – 8 oz. block of Pepperjack cheese, cubed
  • 2/3 cup grated parmesan cheese
  • 1 – 8 oz. pkg. cream cheese
  • 1/2 tsp. Italian seasoning
  • 1 tsp. Salt
  • 1/4 tsp. Cayenne Pepper
  • You may add a little sour cream or mayonnaise for a creamier texture, if desired.

directions

Sauté sausage with onions, bell pepper, and garlic; add jalapenos, artichokes and spinach, stir well and cover for about 15 - 20 minutes to heat. Add cheeses and cover to let them melt, then add seasoning, to taste. Serve warm with crackers or pita chips.
