Roast Beef Hash

Great way to use your left over Roast Beef Roast.

ingredients

  • 4 cups cooked roast beef cubed
  • 2 cups raw potatoes
  • 1 onion, chopped
  • 1 green pepper chopped
  • 1 tomato chopped
  • 3 ounces of tomato paste
  • 2 oz. butter
  • 1 clove of garlic
  • 1 cup dry red wine
  • Salt and Pepper to taste
  • Roast Beef Gravy
  • 32 oz of beef broth low sodium
  • 10 oz of cold water
  • 1 cup of flour
  • 1 T of Worcestershire
  • Salt and Pepper to taste

    In as large deep skillet, melt the butter add the garlic. When the garlic is brown , add the rest of the ingredients and let simmer until potatoes are tender. This is a moist hash, so add more wine or water if needed. Stir frequently.

    Roast Beef Gravy (From Mother)

    Heat the beef broth but don’t boil.

    In a shaker mix the flour and water.

    Slowly add this to the beef broth while stirring. Add Worcestershire

    and continue to stir add salt and pepper to taste as it thickens.
