Heavenly Spinach

ingredients

  • 6 tablespoons butter, divided
  • 1/2 pound mushrooms
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup grated parmesan cheese
  • 10 ounces frozen artichoke hearts, thawed and drained
  • 40 ounces frozen spinach, thawed and drained
  • salt and pepper to taste
  • 3 large tomatoes, slice 1/2" thick
  • 1/2 cup dried bread crumbs

directions

Preheat oven to 325 degrees. Butter a 9“x13” baking dish. Saute mushrooms in 2 tablespoons butter. Combine mayonnaise, sour cream, and cheese. Stir in artichokes, spinach, and mushrooms. Season with salt and pepper. Pour into prepared dish. Place tomatoes on top of the vegetables. Brown bread crumbs in remaining butter. Sprinkle over vegetables. Bake 20 minutes.
