Dijon Pork Loin

ingredients

  • 1/2 cup apple cider
  • 1 T. salt
  • 1 1/2 t. brown sugar, packed
  • 1/2 t. Dijon mustard
  • 2 t. chopped fresh thyme
  • 1 pork loin (2 to 3 pounds)

    1. In small saucepan over medium-high heat, combine the apple cider, salt, brown sugar, mustard and thyme and bring to a boil, stirring to dissolve the salt and brown sugar. Transfer the mixture to a small bowl and nestle the bowl in a larger one filled halfway with ice and water. Let cool completely.

    2. Transfer the mixture to a blender and blend on high speed for one minute. Pour through a fine-mesh sieve set over a small bowl. Inject the mixture along the top of the pork loin in 6 to 10 places.

    3. Roast as directed.
