Red Beans & Rice with Sausage

ingredients

  • 2 lbs. Bryan Cajun Style smoked sausage, sliced in 1/4 inch slices
  • 1 medium/large onion, chopped
  • 3/4 - 1 cup bell pepper, chopped
  • 1 stalk of celery, diced
  • 1 large clove garlic, minced
  • 1 (15.75 oz.) can Trappey’s New Orleans Style Kidney Beans
  • 3 (16 oz.) cans Blue Runner New Orleans Spicy Cream Style Red Beans
  • 1 cup of water
  • 1 tbsp. Parsley flakes
  • 3 – 4 Bay Leaves
  • Salt & Cayenne pepper, to taste

directions

In a 3 quart pot, brown sausage, then add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender. Add beans, water, parsley, bay leaves, stirring well. Season to taste, cover and let simmer for 60 to 90 minutes. Remove bay leaves and serve with steaming rice and enjoy!
